The Taste Of Summer In A Single Dish
Ah, the lovely taste of my favorite summer dish helps to kick off the summer festivities! The credit of this dish comes from one of my favorite people on the planet, Maria. She would make this dish for us on a hot summer day and it always hit the spot. Check out the recipe below to make the dish yourself!
Ingredients
2 Medium Size Zucchini
1/3 White Onion
2 Teaspoons Minced Garlic
1 Cup Cherry Tomatoes
2 Sausage Links
Salt, Pepper
1 Teaspoon Tomato Paste-Optional
How To
Prepare your veggies. You can cut your tomatoes, zucchini, and onions however you’d like. Make sure you don’t cut them into too small of pieces.
Add your onions with a very little bit of olive oil.
Add your Zucchini. Let this cook for 10 minutes or more. Wait for your zucchini to soften
Add your Tomatoes Last. They take the shortest amount of time to cook. Be sure not to overcook them or you will remove the rich tomato taste.
Remove your cooked ingredients and put to the side
Remove the skin from the sausage and cook using the juice/ natural oils of the vegetables.
Add Veggies back to the pot.
Add cheese & Serve!
